Simple habits make all the difference.
Things like ensuring that only clean utensils are used for serving, and making sure the bottle is closed properly help to prevent any sort of contamination.
For the majority of our sauces keeping the product chilled after opening will also help maintain the freshness of the flavour.
There are exceptions however, in particular, the products made using rice bran oil.
Rice bran oil is a great neutral oil to carry other flavours. To maintain the optimum texture and flavour it does need to be treated differently. Sauces that are made with it like the Hollandaise and USA Style mayonnaise are best kept at room temperature before and after opening. This helps to prevent the texture deteriorating and splitting occurring.
