Cajun Chicken Breast
with
Honey Mustard Sauce
and
Maple Syrup
  
   2 chicken breasts, skinned & boned
Salt
French Maid cajun seasoning
Oil
Mesclun
French Maid balsamic vinaigrette
French Maid honey mustard sauce
French Maid maple syrup
Mild to medium hot chillies
Grilled bacon
  
   Season the meat with salt and Cajun seasoning.
Heat a little oil in a heavy based fry pan or on a BBQ plate.
Sear the meat on both sides, place in an oven dish, cover lightly with tin foil and roast in a 180C oven for about 10 minutes or until the chicken is just cooked.
Transfer the meat to a warm oven or rest on the stove top for 5 minutes.
Dress the lettuce with the balsamic vinaigrette and arrange on plates.
Pour some honey mustard sauce onto the plate, slice the chicken and arrange on top of the sauce. Drizzle with maple syrup.
If desired garnish with mild to medium hot chillies and crisp bacon.
